Honey, Lemon & Thyme Roast Chicken

(serves 4)

You will need:

– 1.8-2kg Free-range chicken            – 1 large knob butter

– zest of 1 lemon, grated                     – 4 tbsp honey                     – 1 tbsp thyme


Preheat your oven to 180 celcius / Gas Mark 6. Rub the chicken with butter, season and roast for 40-50 minutes.

Remove from the oven and pour the juices into a bowl and mix with the zest, thyme & honey and pour over the chicken.

Baste every 5 minutes as the chicken roasts for a further 20-30 minutes.

Rest for 15 minutes before serving, and heat the honey juices to pour over as you do.
