Spinach Muffins

(makes 12, maybe 24 – give or take?)

You will need (although the fillings are really up to you):
– 500g self-raising flour                          – 100g spinach leaves
– 1/2 tsp baking powder                          – 250g cottage cheese
– 1/2 tsp salt                                                 – 1 medium egg
– 1/4 tsp chilli flakes                                 – 300ml milk

– 12-24 sundried tomatoes

Preheat your over to 170 celsius (fan) and grease two muffin tins. Mix together the flour, baking powder, salt and chilli flakes. Roughly chop the spinach and add to the mix. Next add the cheese, egg and milk.

Spoon the half of the mixture out into the two tins and drop a sundried tomatoes into each the share the rest of the mix. Bake for 30-35 minutes.
