My easy home-made wholesome honey ice-cream…

If you are fed up with crappy frozen modified milk products from your local supermarket masquerading as ‘ice cream’? Yes? Then you’ll love this super easy two (or three?) ingredient ice cream. It’s easy to make with proper wholesome ingredients and you don’t need an ice cream machine.  Best of all, it’s absolutely delicious!

Note: whilst you don’t need an ice cream maker, you do need to do A LOT of whisking/whipping. If you think you’ve done it – put in at least as much effort again. Think of it is a home workout at the same time!

You will need:

1/2 cup of honey (and some bits of honeycomb will finish it off a treat!)

2 1/2 cups of cream (35% fat)

(I added vanilla to my recipe as well. It is not necessary).

How to do it:

Whip 1.5 cups of whipping cream (plus 1 teaspoon of vanilla extract if desired) until it forms stiff peaks, refrigerate.

Heat honey on low heat until it is very runny and add the remaining 1 cup of cream. Stir together until well blended (and grate in teensie bit of vanilla bean, if desired).

Add honey/cream mixture to the whipped cream. Whisk until well blended. Freeze approximately 6 hours until the mixture is the consistency of ice cream.
