(makes 2 dozen)
You will need:
– 200g butter – 150g demerera sugar
– 200g self-raising flour – 200g rolled oats
– 2 generous tbsp peanut butter – 2 generous tbsp golden syrup
Preheat the oven to 170C (160C fan) / Gas Mk 5 and grease two baking trays. Slowly melt the butter along with the sugar and syrup. Meanwhile mix the flour and oats together in a bowl. Now add the peanut butter to the heating mix – let it slowly melt in and stir throughout. Then add to the mixing bowl and mix together to form a dough.
Make 12 pattys on each tray – making sure you leave room for them to spread during baking. Bake for 15 minutes then allow to cool for at least another 10 minutes.
Omit the peanut butter and substitute the golden syrup for honey (you can even replace the sugar with honey if you like). Adding raisins is also a nice change, as is a generous measure of whisky into the mixing bowl.
